Project 365, Day 187
Keeping track of covers for the past couple of days…
Yesterday - 154
Today - 174.

For a two person kitchen, that’s not bad. That’s actually awesome. Except now, I have to be faster on prep.
So the story for the day is Doug Flutie.
I walked into the Garde Manger kitchen today, and Mark asks me if I knew my football. I said yes (and if you know me, I know my...

Dear Regan,
This one’s for you.
——
It all started when Regan tagged me on a post where she was making a Chai tea ice cream using the same recipe shown below:
http://macandcheesereview.blogspot.com/2008/06/earl-grey-ice-cream.html
She told me that it wouldn’t set because the mix stated in the recipe would not be in the custard, searching the cause for fault. I told...

Project 365, Day 185
From this, to that:
This is what I do on my days off: I make plates of food. Much like last week, I make two versions of this plate: The dummy run, and the much better looking plate. This is the dummy version.
Today’s inspiration was from the recipe that Regan got in a blog called Mac and Cheese called Earl Grey Tea Ice Cream. But since I don’t have an ice cream machine, I...

Project 365, Day 185
This is not fruit salad, though it could be. Kind of. Maybe. You tell me.
So today was my day off, I did the usual things: Print pages for my extern manual, eat a cheap meal and head out to Walmart.
Other than that, I played Madden (to which I learned that I can play people online. say what?! Cool.)
Now I’m watching a football game rooting for the Saints. A lot of football left!

What's your favorite video game?
Madden or Final Fantasy.

To Go.
A sample ticket. Just saying, there’s space over that thing. Now, here’s the story:
I asked if this order was to go. I heard it once, but I confirmed by asking again to confirm. The waiter said yes, and I simply asked to write it down in order to specify. Then I was told that there was no space in the ticket.
Again, read the first line of this blog.
While yes, I could have...

Candle light?

I just wrote up my third module for extern. I kind of had to laugh when it said to ask for more experience in different areas or whatever. That was my original plan, then again I realized that I needed more experiences in the rush. I’m not even five weeks into it yet. Jeebus.

Project 365, Day 184
Partial reason why people don’t take me seriously are as follows:
1. My desktop is a chick. Like, a baby chicken because I thought of The Soup’s “Chicks, Man” segment, got obsessed with saying it, then it just stuck.
2. This is currently on top of my laptop. It’s like a collage of random stickers or good things that deserve to be there. The penguin’s the...

Dear Christine,
I’m sorry I had to lie to you but just to let you know, I did receive your card today and am currently dying in laughter.
If you can’t read what it said:
T’was the night before Christmas and all through the house, not a creature stirring, except one.
Did I mention I was dying of laughter?
This definitely made my day....

What's the best gift you've ever received?

Project 365, Day 182
Sheryl shared some Christmas cookies with us today!
Today, I prepped three boxes of baby carrots. It was from a local farmer so the stalks were like really long, and they kind of looked like…
That, except the green part was much longer and… bushier (for the lack of a better word.) though I wished that I had my camera for this moment because it was just literally like a holy crap...

A friend had a problem making the same exact recipe. I plan on screwing around with this idea on my next day off, which I would like to think is on Monday over with some Crepes… Gotta think of pairings now…
Project 365, Day 182
So, this is a true story:
Yesterday, while I was cooking my Salmon dish, I looked back at the box of the Swanson’s broth box (yes, I use a boxed broth. I’m sorry), and somewhere on the back said they also sold stock.
I asked myself:
What’s the difference between a stock and a broth?
Yup. That’s stuff that you learn in Skills 1 (your very first kitchen) and therefore...

Someone asked me for blogs that had to do anything with the CIA (Culinary Institute of America). I read these religiously, and am still trying to find some more, so stay tuned!

Having an opinion is cool and all, but it doesn’t mean that people want to hear it. Ultimately, I know that people are following this blog despite Tumblr saying that I only have 25 followers.
Despite that statement, however, my previous comments of food failures and the lack of thought from the commentary behind them will stick due to my laziness of removing them. That, and it shows you a...

It’s always the thought that counts but come on, man.
On a serious note...
I know I’ve shared this story before, but here’s proof.
Chef Schwararoch once told us that there are three days you remember in your life: The day you were born, the day you wed and the day you die. In case number 2, he states that it wouldn’t be about the location or how big the rock was on the ring, rather it was about the food.
Case in point. See link.
