I’ve asked people this question:
“What can you do in 60 days?”
Since graduating Culinary School, I found myself rather bored. I wanted something fulfilling and I hate sabbaticals. A couple of craigslist searches later, here I am working for “Establishment”, a restaurant in Hermosa Beach doing consulting work. The stacks of paper are equipment lists and food orders, all while listening to flamenco music on my Pandora Station.
Apparently, this isn’t culinary school anymore: I’m actually affecting people’s lives. Holy crap.
